Almond and Lemon Loaf:

Ingredients:

  • 1 cup of almond flour
  • 1/2 cup of all-purpose flour
  • 1/2 cup of granulated sugar
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 2 eggs
  • 1/2 cup of olive oil
  • 1/4 cup of lemon juice
  • 1 tbsp of lemon zest
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch (23x13cm) loaf pan.
  2. In a large mixing bowl, combine the almond flour, all-purpose flour, sugar, baking powder, and salt.
  3. In a separate mixing bowl, beat the eggs and then add in the olive oil, lemon juice, and lemon zest. Mix until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 40-45 minutes or until a toothpick inserted into the center of the loaf comes out clean.
  6. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Dust with powdered sugar before serving (optional).
