Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups of diced mixed vegetables (carrots, peas, and corn)
  • 1 cup of cooked lentils
  • 1 cup of vegetable broth
  • 2 tablespoons of tomato paste
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper, to taste
  • 4 cups of mashed potatoes (can use store-bought or make your own)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion and garlic and sauté until softened, about 5 minutes.
  4. Stir in the mixed vegetables, cooked lentils, vegetable broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Bring the mixture to a simmer and cook for 10 minutes, or until the vegetables are tender.
  6. Transfer the mixture to a baking dish.
  7. Spread the mashed potatoes over the top of the vegetable mixture, spreading evenly.
  8. Bake for 25-30 minutes, or until the mashed potatoes are golden brown.
