Italian Sheet Pan Gnocci

Sheet Pan Gnocchi: A School Night Favorite in the Old Country

Growing up in the old country, family dinners were a big deal. We would gather around the table every night and enjoy hearty, comforting meals that were made with love and care. One of our favorite dishes was sheet pan gnocchi with Beyond Italian sausage, red onion, mini peppers, and grape tomatoes.

This recipe was a school night favorite in our family because it was so easy to make and packed with flavor. We could throw everything together on a single sheet pan, pop it in the oven, and have a delicious meal ready in no time. The aroma of the roasted sausage and vegetables wafting through the house was enough to make our mouths water and our stomachs growl with anticipation.

The beauty of this recipe is in its simplicity. The gnocchi, sausage, and vegetables all cook together on the same sheet pan, so there's no need to dirty multiple dishes or spend hours in the kitchen. The Beyond Italian sausage is a delicious plant-based alternative to traditional sausage, and it adds a savory depth of flavor to the dish.

The red onion, mini peppers, and grape tomatoes add color and sweetness to the dish, while the garlic and olive oil bring a subtle, aromatic note. The gnocchi themselves are pillowy and soft, with a satisfying chew that makes them the perfect base for this hearty meal.

We often garnished the dish with fresh basil from our garden, adding a touch of bright, herbaceous flavor. Sometimes, we even sprinkled a little shredded Parmesan cheese on top for an extra boost of richness and umami.

Whether you're looking for a quick and easy dinner on a busy weeknight or a cozy meal to enjoy with loved ones, this sheet pan gnocchi with Beyond Italian sausage, red onion, mini peppers, and grape tomatoes is sure to satisfy. It's a school night favorite that brings back memories of simpler times, when family dinners were a cherished part of daily life.

Ingredients:

  • 1 lb. gnocchi
  • 1 package Beyond Italian sausage, sliced
  • 1 red onion, sliced
  • 1 cup mini peppers, sliced
  • 1 pint grape tomatoes
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions:

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.

  2. In a large bowl, combine the sliced Beyond Italian sausage, red onion, mini peppers, grape tomatoes, minced garlic, and olive oil. Toss everything together to coat, and season with salt and pepper to taste.

  3. Add the gnocchi to the bowl and toss everything together to coat. Spread the mixture out evenly on the prepared baking sheet.

  4. Bake in the preheated oven for 25-30 minutes, or until the gnocchi is cooked through and the vegetables are tender and slightly charred.

  5. Serve the sheet pan gnocchi immediately, garnished with fresh basil if desired. Enjoy!

Note: You can also add some shredded Parmesan cheese on top before serving if you like. To make cleanup easier, you may want to cover the baking sheet with foil before adding the parchment paper.
